This PhD project aimed to investigate the chemical profile and neuroprotective properties of Hericium erinaceus (Bull.) Pers. using an innovative OMICs approach, integrating NMR metabolomics, proteomics, and HPLC untargeted metabolomics. To get the aim of the project it was necessary to collaborate with multiple Italian research institutions. The research focused on understanding the differences among different strains, and detailing the chemical composition of H. erinaceus, with an emphasis on its beneficial effects for central nervous system through in vitro and in vivo tests. Over three years, the project progressed as follows: in the first year, the collection and conservation of Italian samples, and NMR metabolomics were undertaken with attention to intraspecific biological variability; in the second year, proteomics and untargeted HPLC metabolomics analyses were performed on the same mycelia; the third year was focused on data interpretation and preliminary functional tests were carried out. The interdisciplinary approach allowed the identification of strain-specific differences and provided new insights into the chemical profile of H. erinaceus, contributing to a deeper understanding of its neuroprotective properties.
