This doctoral research examines critical aspects of agrifood systems transformation in developing contexts, with a focus on rural development, food security, and nutrition. Through three empirical studies, it explores (i) disparities in access to productive resources, (ii) the impact of organic value chain participation on household food security in Sao Tome and Principe, a Small Island Developing State, and (iii) the drivers of ultra-processed food consumption in Suriname. The research employs a mixed-methods approach, combining cross-country quantitative analysis with primary data from fieldwork. Findings contribute to understanding how structural inequalities, market integration, and dietary transitions intersect to shape food security outcomes.
