The aim of the project is the formulation of new delivery systems based on covalent interaction between alginate and chitosan. In particular different methodologies of preparation of the carriers both in water and in emulsion have been studied. The synthesized nanoparticles show a good ability to encapsulate hydrophobic molecules of great interest in nutraceuticals.
