Food wastes and by-products are generated in large amounts in the industries around the world, their disposal in the environment being inconvenient to the ecosystem. Therefore, proper waste management plays a vital role in the growth of food chain sustainability. This project aimed to explore the potential of by-products from the winemaking and distillery industry, as well as wastes from the rapeseed and sunflower oil industry. The different eco-friendly approaches employed in the current research project are summarized in each section, based on published scientific papers. Overall, the project suggests that employing waste and by-products in the food industry for their antioxidant properties could promote circular economy principles and reduce food waste.
